“And in the morning, I’m making waffles”

I can’t help it every time I want to make waffles I see donkey from Shrek, in my head, jumping on the chair saying with an extremely enthusiastic voice: “and in the morning, I’m making waffles”. I can’t hide the fact that donkey comes out whenever I’m making waffles. Waffles just make me so happy!

I mean it’s waffles! Who doesn’t appreciate a tasty warm homemade waffle with your favorite topping? Just thinking about it makes me drool.

So a while ago I thought, let’s make some healthy waffles without destroying their taste or the pleasure you get from eating it. In that way, you can eat them more often, even with good consciousness. All of this led me to invent these amazing waffles everybody can enjoy. They are gluten-free, sugar-free and oil-free (when using a non-stick waffle iron). Just to raise the bar, even more, you get good fiber from the oats. potassium from the bananas topped off with omega-3 from the flaxseeds. These babies are made with everyday ingredients you can get in a regular grocery store. If you don’t have gluten-free flour and aren’t really gluten intolerant or just simply want “regular” ones just replace the gluten-free flour with regular wheat or spelt flour (but it’s important to use two different flours for the texture). To make them sweet it’s all natural sweetener from the ripe bananas and vanilla. Are you a huge sweet tooth and really don’t want to add a topping just add a little sweetness of choice to the batter.

Now let’s bring out your inner waffle madness and makes some really tasty waffles.

INGREDIENTS

2 ripe bananas

2.5dl plant-based milk (coconut milk, the drinking version is awesome)

1 tbsp apple cider vinegar

2dl gluten-free oat flour

2dl gluten-free flour blend after choice

1/2 tsp real vanilla or 1,5tsp vanilla extract

1tbsp baking powder

1tbsp crushed flax seeds

2 1/2tsp cardamom

(Oil when using a non-stick waffle iron)

DIRECTIONS

Mix the plant-based milk with the apple cider vinegar. Let sit 5min.

Blend the bananas with the mylk mix.

Pour all of the dry ingredients into a bowl.

Add the liquid with the dry ingredients and whisk well.

Let sit 10min (optional).

Pour a ladle into a preheated waffle iron and make those waffles.

Enjoy with your favorite topping such as jam, maple syrup, age syrup, yacon syrup, coconut sugar, cane sugar, cheese etc.
